This is one of my favorite Christmas treats! I crushed three full-size vegan candy canes to sprinkle on top of the fudge before putting it in the fridge to set. To crush the candy canes, put them in a sealed ziploc bag, place them on a cutting board, and use a hammer to crush them into small pieces.

  


  

Vegan Peppermint Chocolate Fudge

  

Ingredients

  • 2/3 cup coconut milk

  • 1/2 tsp vanilla extract

  • 1/2 tsp peppermint oil

  • 12 oz dairy free chocolate chips

  • 2 tbsp coconut oil

  • 3-4 candy canes, crushed

Instructions

  1. Bring coconut milk to a simmer on low heat in a small saucepan.

  2. Add coconut oil to the saucepan and whisk as it melts.

  3. Add chocolate and whisk until completely melted and mixed with coconut milk.

  4. Remove from heat and add vanilla and peppermint.

  5. Line a small baking dish with parchment paper and pour the mixture in. Shake gently to distribute the fudge evenly.

  6. Pour crushed candy cane pieces on top of fudge. Cover with plastic wrap and refrigerate for 6-8 hours, or until firm.

  7. Leave in the fridge until ready to serve (the fudge will melt after about a half hour at room temp). Cut into small cubes and enjoy.
