This is one of my favorite Christmas treats! I crushed three full-size vegan candy canes to sprinkle on top of the fudge before putting it in the fridge to set. To crush the candy canes, put them in a sealed ziploc bag, place them on a cutting board, and use a hammer to crush them into small pieces.
Vegan Peppermint Chocolate Fudge
Ingredients
-
2/3 cup coconut milk
-
1/2 tsp vanilla extract
-
1/2 tsp peppermint oil
-
12 oz dairy free chocolate chips
-
2 tbsp coconut oil
-
3-4 candy canes, crushed
Instructions
-
Bring coconut milk to a simmer on low heat in a small saucepan.
-
Add coconut oil to the saucepan and whisk as it melts.
-
Add chocolate and whisk until completely melted and mixed with coconut milk.
-
Remove from heat and add vanilla and peppermint.
-
Line a small baking dish with parchment paper and pour the mixture in. Shake gently to distribute the fudge evenly.
-
Pour crushed candy cane pieces on top of fudge. Cover with plastic wrap and refrigerate for 6-8 hours, or until firm.
-
Leave in the fridge until ready to serve (the fudge will melt after about a half hour at room temp). Cut into small cubes and enjoy.
